While everything going on in the world has been a bit crazy recently, I’ve found that one of the best things I can do to reduce stress and follow a normal routine is create new recipes! This is the perfect time for everyone to focus their creative energy on something they enjoy, so I’ve been planning a variety of posts and recipes that will be coming your way in the next few weeks.
This smoothie recipe was tested by my family and friends numerous times, and may stand as one of my all time favorite creations. The vegan protein powder makes this a filling breakfast or snack on the go, yet it also tastes like a dessert because of the cacao and peppermint extract. Not to mention, these are easy ingredients to keep stashed in your freezer or pantry for long term storage!
I like using the Vega One or Nuzest brand proteins because they have clean ingredients and are completely plant-based. While I’m not personally vegan, I do try to reduce my consumption of animal products, so this is a great option. As an alternative, feel free to use another protein powder of your choice, such as whey, or supplement with other whole food proteins, like hemp seeds, collagen peptides, and chia/flax seeds!

Mint Chocolate Protein Smoothie
- 1/2-3/4 of a frozen, ripe banana
- 1 cup spinach
- 1/4 cup ice (optional- substitute frozen cauliflower rice)
- 1-2 scoops chocolate protein powder
- 2 tbs raw cocoa powder
- 1/2 tbs maple syrup
- 4 drops mint extract
- 1 cup milk (almond, oat, coconut, or dairy)
Add all ingredients to a high powered blender and blend until smooth. Enjoy!
